Reformaten organizes a two-day course that is aimed at restaurant staff and is adapted to Småland and southern Sweden with PM&Vänner, Växjö Municipality, the County Administrative Board, Destination Småland and Länsförsäkring Kronoberg as local partners . The course is aimed at you who are restaurant owners, kitchen managers, restaurant managers or chefs. We want to give participants inspiration and knowledge for conscious choices that will lead to healthier soils, resilient local ecosystems, increased food security and promote better health and awareness among guests and the population.
The training consists of two inspiring and tasty course days where the first course day is an excursion day where we visit some small-scale growers and producers in Kronoberg County to get an insight into their practical work. The second course day is filled with lectures and workshops with inspiring experts who give you increased knowledge and concrete tools for a positive impact on the food system. We mix theory with practical elements. We will also discuss what you see as challenges and obstacles to working more sustainably and work together on solutions. The content of the course is based on the Diet for a Green Planet meal concept.
Previous speakers include Rune Kalf Hansen, Niklas Karlsson (Studio 2000), Stefan Eriksson, Rebecka Milestad (KTH), Jack Muirhead (MAD Academy), Per Styregård, Sébastien Boudet, Elmar (Solmarka Gård), Morgan (PM & Vänner), Flemming (Stedsans in the Woods), Cecilia Tompson (Linköping University) and more.
